Espresso

A shot of espresso from The Nook with a rock candy stick

Here at The Nook, we only pull double shots.

The dose is 22 G of coffee. Most shops use 17 G. The extra coffee is there so we can pull a ristretto, which means restricted.

Less water goes through the coffee, and the shot stops early. Sweetness extracts first. The burnt, bitter, and sharper acidic notes come later, which is what you get when a shot is over-pulled. That long pull is called a lungo.

Caffeine dissolves quickly, so most of it is already in the ristretto. The cup is more concentrated, sip for sip. The shot has a little less caffeine than a lungo, because a lungo is more liquid and keeps extracting.

Every shot at The Nook is a ristretto. Crema on top. No milk. No sugar, unless you ask.
